Oscietra sturgeon caviar, or russian sturgeon caviar, is a high-quality and one of the most sought-after delicacies in the world, and a truly exclusive product.
Oscietra or Russian sturgeon (Acipenser gueldenstaedtii) is a rather large fish of the sturgeon family. Its average weight is about 12 kg.
Fish enter rivers from the sea in the wild only for spawning. Most females spawn from age of 8-10 years every four to five years.
It was Osietra caviar that gave rise to industrial sturgeon farming, as the caviar of this species is of outstanding gastronomic value and exceptionally high quality. Many caviar connoisseurs rate it even higher than Beluga caviar.
